The Mcusta Zanmai Beyond Nakiri 16.5 cm is a traditional Japanese vegetable knife designed for precision slicing, dicing, and decorative vegetable techniques. Its tall, straight-edged rectangular blade is ideal for vertical cuts and for transferring ingredients directly into a bowl or pan. Used properly, it can produce katsura-muki – ultra-thin, translucent vegetable slices often used for decorative purposes in Japanese cuisine.

Care Instructions
This knife is crafted from Aogami Super high-carbon steel, known for its superb sharpness and edge retention. However, carbon steel is not stainless and requires proper maintenance:
- Dry immediately after washing – never leave the blade to air-dry.
- Keep in a dry place – avoid storing in damp environments or near water sources.
- Use camellia oil or food-safe oils for long-term storage to protect from rust.
- Avoid contact with acidic foods like onions or citrus for extended periods – they accelerate patina and corrosion.
- Clean using non-abrasive sponges and soft kitchen surface cleaners (e.g. CIF cream) to remove stains.
- Do not put in dishwasher. Heat, chemicals, and moisture will damage both blade and handle.
About Aogami Super Steel
Aogami Super is the hardest and most advanced version of the Blue Paper steel family. It contains vanadium, which improves hardenability and wear resistance. Despite its high performance, it is more brittle under lateral stress and requires skilled handling.
