Care and Maintenance
This knife is made from high-carbon Aogami Super steel, known for extreme sharpness and edge retention. However, carbon steel is not stainless – proper care is essential:
- Always dry the blade immediately after washing – never let it air dry.
- Store in a dry place – avoid leaving it wet on magnetic strips or in drawers.
- Apply camellia oil or a neutral edible oil if the knife won’t be used for a while.
- Avoid prolonged contact with acidic foods (e.g., onions, citrus) – these can accelerate rusting and leave patina stains.
- Do not put this knife in a dishwasher – heat and chemicals can damage both blade and handle.
- Use soft cleaning products like cream cleansers and non-abrasive sponges to remove discoloration.
About Aogami Super Steel
Aogami Super (“Blue Super Steel”) is a high-performance carbon steel with excellent wear resistance and cutting power. It is the hardest steel in the Aogami family, thanks to the addition of vanadium.

- Chromium: 0.3 – 0.5%
- Tungsten: 2 – 2.5%
- Vanadium: 0.3 – 0.5%
- Manganese: 0.2 – 0.3%
- Silicon: 0.1 – 0.2%

- Sulfur: 0.004%
This steel requires advanced skills when used at higher hardness levels and is less tolerant to lateral stress, but in return offers superior edge sharpness and retention.

The knife comes with a 24-month warranty from the date of purchase, covering hidden material or manufacturing defects under the following conditions:

- Proper maintenance and storage are followed.
